- 2.03 fl ozolive oil
- 1.07 ozbutter
- 3 clovesgarlic, minced
- 2 tspsalt
- 1/2 tspblack pepper
- 1.06 pintswater
- 7.14 ozqueso frito, fried cheeseOptional
- 6 largeeggs, fried or scrambledOptional
Instructions

Boil chopped plantains in salted water until very tender, about 15 minutes.

While plantains cook, fry salami slices until crispy. Set aside.

In same pan, sauté onions in olive oil until caramelized.

Add garlic to onions and cook 1 minute more.

Drain plantains, reserving some cooking liquid.

Mash plantains with butter, adding cooking liquid for desired consistency.
